I recently had the privilege of being one of the first participants in their new 'Barista Boot-Camp' training course. For me it was the bridge between a standard barista course and a deeper understanding for all things coffee. Lisa tailored the aspects of the course to our individual needs, being flexible to what we wanted out of the course and our personal learning goals. We explored everything from sourcing green beans at origin all the way through to brewing delicious coffee; not only by taste but with the science to back it up using a refractometer and other equipment. This course challenged my understandings of what made up 'amazing coffee' and deepened my grasp for the factors necessary for flawless extraction. I got first hand experience at Aunty Pegs and was warmly welcomed as part of the 'Proud Mary' family by their friendly team. It was 2 days I will never forget and my skill-set has improved tremendously! And most importantly I drank lots of tasty, tasty coffee! Thank you!
Attentive staff but the 2nd round of flat whites came out seperately which is awkward when there are more than one person anticipating another coffee. No complaints with the extraction, great crema and served at perfect temperature. I prefer the grungier environment of Kent St and Degraves but Proud Mary is situated slightly away from bustling foot traffic.
I don't take places like Proud Mary for granted anymore. The expectation of exceptional coffee and the constant delivery of good coffee is remarkable. The service was on point and so was the buzz.. I sat at the communal table. They have a breakdown of coffees from the farm La Esperanza, owned by a family from El Salvador. This is all available to read on a coffee card which goes in to detail about process, varietal and flavour. The coffee is available in a filter or espresso option. My short Mac, the Pacamara varietal was spicy with a nice sweet fresh finish. As always a fantastic experience here
Like my last visit, I was in heaven drinking their house blend. Latte had a creamy mouth feel and chocolate notes with a hint of acidity to balance it. Food is good too with service friendly enough and efficient. Great vibe with plenty around even at 7:30am! 9.75/10
