Two phillipino sisters who have worked in some of the great restaurants of New York now bring you a specialty coffee cafe right next to the Bastille Markets. Lots of subtle twists in the food (e.g. A Cubano sandwich made with pulled pork). Definitely an American twist. I've been a few times now. The first time the espresso wowed me. A top 5 or top 10 espressos in Paris moment. The next few coffees were also good. Not quite up to top 10 status, but definitely remembered long after they were drunk with a little happy coffee memory smile. Definitely not over or under extracted. No bitterness and more importantly no sourness which I find comes through quite a bit. Just well balanced with some depth and complexity. Some dried cocoa tasting notes. Funky machine with clear panels lets you peer inside the machine.
