Not sure what Hamish is talking about. If you look closely the machine at Lot 104 has 3 timers which time each shot. When it's busy I see the Barista move fast but she also throws out any under or over extracted shots using only the quality ones. She doesn't need to watch every shot. I see they use scales to calibrate too. I come here often and chat with the friendly staff and unfortunately I think the freshness of the beans is sometimes a problem and may affect the body and flavour, but the new management are rectifying this.
