I just recently found Ethical Bean Cafe, and I really love their take on coffee. The cafe is hip and modern, very bright - taking their colour scheme from Guatamalan traditional dress. Their coffee is fair trade, certified organic, and they even boast a carbon neutral status. They have great photos of Guatamalan children they sponsor - which makes you feel like the cost of a cup of coffee is at least making a difference. The coffee is excellent. I think they roast it onsite.
