When I'm in the city, Sensory Lab is one of those cafes that I will try to go to. The coffee is always constant and the staff are more than happy to help you learn.

I love the cafe design. Especially the single seat table near the mosaic tiling wall. Order a latte (i think it's S1 Champion Blend), and such a nice taste. The perfect balance of coffee and milk. Not really my favorite, but would not mind dropping by again.

Mellow long mac. Nice strong hot choc, not too sweet.

I was in the city today and went looking for a place I hadn't been before. Sensory Lab was the answer.

Sensory Lab is perched at the back entrance to David Jones. They've used the location quite well considering it straddles two staircases.

The staff seemed alright.... Read more

This joint doesn't live up to the hype. Found the long mac to be a touch too hot. Nonetheless...it went down quite nicely.

Went to Sensory Lab today. What an amazing concept! I love it! You get to experience coffee as it should be in a scientific but relaxed atmosphere. Reminds me of those school science lesson days with beacons and bunson burners except here it\'s replaced by a beautiful 3 group Slayer, another 3... Read more

Had an awesome flat white. Temperature was great, milk was silky smooth. Coffee flavour was also very nice, definitely a new favourite in the CBD!

I can't help but find this place a bit gimmicky.

I initially went in to check the place out because of the Slayer, expecting that anywhere willing to spend that amount of money on a coffee machine would have to be really serious about their coffee. I was a bit let down.

Yum! Double ristretto was spot on and the cold drip was deliciously sweet. Definitely worth the visit.

Had a couple of ristrettos, one single origin Brazilian, and a house blend. House blend was nicer, but I favour something with acidity. Will certainly be back to try some filters when I an down in Melbourne again. Full of hario gear too if you're looking to buy something.

This was our second visit to Sensory Lab, and sadly the coffee was not as good as the first visit. We ordered the Single Origin Bazilian, which came out very long and had a light crema. The coffee itself was stale and lacked body. I questioned the roasting date, which was almost 2 weeks earlier.... Read more

Organised a team meeting here today and the four of us ordered two skinny latte's and two costa rican single origins hario pour overs. Never had coffee brewed that way and it was very nice, bit lighter then normal but so smooth! Really enjoyed it, staff are so helpful and knowledgeable and everyone... Read more

It feels like being in a science/ chemistry lab, with the wait staff in lab coat. Staff certainly are knowledge in coffee bean selection and the process. The filtered coffee (called Slayer) is nice, using ethiopian single origin. However, the coffee blend for espresso style are too weak in my... Read more

Sister cafe to St Ali in south Melbourne, this cafe which is located in the rear of David Jones is a nice place to have coffee. Always busy with through traffic to David Jones and cars passing, it still retains a good atmosphere.

I had a pour over coffee which was top rate. Nice... Read more

Exquisite short black Nicaraguan S O. Full flavored flat white. Nice feel to the place and staff were not unfriendly. Coffee definitely the drawcard.

Stubbled across this place this afternoon. Smooth well balanced coffee must say was not expecting it. Very pricey 4.80 for a 12oz.

Came here this morning (9:30am) for a quick sit, but the cafe itself was not yet open. They did however have the takeaway bar pumping out coffee, so I decided to go with that. So glad I did, as it was great. Smooth drinking and very enjoyable. Will be back again next time I'm on holidays in Melbourne

I had a soy latte here, and I must say it was extremely underwhelming. Apart from being expensive ($4.30), the coffee itself was bitter and the milk very lukewarm. So disappointing, especially because I loved this place when it first opened.

Also, on another occasion a few weeks ago,... Read more
