back again and so sad to see the quality of the coffees have dropped. Both flat whites weak, watery and overfilled . The flavour was insipid mostly milky. Pretty latte art. What a crying shame.
Bumped into this place while having a drive up the mountain, and was excited to see it was a roastery as well as espresso bar. Been here twice now. They are not a roastery and should stop promoting themselves as such. The service was very amateurish, no one seems to know what they're doing and the coffee was very ordinary.
What a load of spin this place is.They say they are coffee roasters but it is roasted by an independant roaster in Southport.They say they travel to the worlds best coffee plantations and procure only the best beans,but sell only Thailand beans....you pay 9 dollars per kilo for roasted beans on... Not that good. Have been here a few times now. Had a regular cap the last time and it was cold and bitter. It's a funky place, well attended, and the staff are friendly, but the coffee was below par....
Considering I live about 2 minutes from here it is easily the best coffee I can get in the area but have had a few questionables. FW's where the foam has dropped before it got to my table and some dodgy ones. All I'll say is when its good, its really good, but when its not - don't drink it!

Awesome new espresso bar to Tambourine Mountain. My dbl rist. F/w rocked! Hence why I am still here on my third one. Well made and for only their second day of opening, I can see a great future for Hillbilly. I also had a quiche lorrraine that was great. Loving it all and love the name too!
First visit today. Definitely bot a roastery(roasted in sthport,beans from thailand)- however, nice1/2 strength long black.
Outstanding coffee. Great service. Lovely location. Attention to detail here has paid off: my coffee came out quickly and staff were knowledgable about their beans and blends. My flat white was neither too hot nor too bitter while still strong (as requested). Reasonable prices and friendly.
Takeaway cap this morning was enjoyable enough, but it was clear they were understaffed... the chef was waiting tables and the girl pulling shots was obviously new. Cap wasn't full, foam was stacked on top. Coffe taste was actually Ok, but there's no evidence they roast on site, despite the signs outside!
Great setup and interesting coffee. Very unique flavour profiles but I enjoyed. Would definitely tell others to come along and have a try.

I'm Glad I came here. They do real coffee. The coffee is good. Not amazing- not bursting with flavours, but a nice strong, but not harsh, taste. And atmosphere is reasonable. Nice staff
Out in the hills looking for coffee and this place comes highly recommended. Its nice in that it really is a nice place to be when you are having coffee. One of my favourite. The best I had was a piccolo peaberry. Super friendly staff that loved talking about coffee.
Great little spot, staff were friendly and engaging, had 2 coffees and a hot chocolate and all were excellent. Will make this a regular stop on our Tambo trips.

Coffee was delicious! Made with perfection, perfect temp, unique taste and cute mug. Staff are extremely friendly and the cafe has a very relaxing vibe that makes you want to stay a while. The hillbilly shake is also a winner.

Stopped in here last weekend. Great place nestled up in Tamborine, coffee was great and the banana bread is the best i've had. Serentiy is a dish best served free in this case it would seem- with the permutation of tempo allegretto that all good coffee shops should have. See you next weekend.

AA Premium Phahi High Mountain single origin and the super intense Peaberry. Very smooth and beautiful tones. A very distinctive coffee that keeps you coming back for more. hand grown, hand harvested and processed in mountain springwater. Clean and Green !!!
